Since it is summer in most places and do I dare say hot, let’s concentrate on those easy meals. When one says they made a salad for dinner, we are always amazed at what they put into their salads. So this month – ‘salads’ is the key ingredient. Keep in mind that salads can be tossed, Cesar, macaroni, turkey, chicken – the list is endless. Share with us what is your favorite salad is along with the prices and pictures can.

GREEN BEAN, WALNUT, AND FETA SALAD
2 lbs fresh green beans, trimmed
1 small red onion, thinly sliced
4 ounces crumbled feta cheese
1 cup coarsely chopped walnuts or pecans, toasted
3/4 cup olive oil
1/4 cup white wine vinegar
1 tablespoon chopped fresh dill
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
CUT green beans into thirds, and arrange in a steamer basket over boiling water. Cover and steam 15 minutes or until crisp-tender. Immediately plunge into cold water to stop the cooking process; drain and pat dry.
TOSS together green beans, onion, cheese, and walnuts in a large bowl. Cover and chill 1 hour.
WHISK together olive oil and next 5 ingredients; cover and chill 1 hour.
POUR vinaigrette over green bean mixture, and chill 1 hour; toss just before serving. Yield: 8 servings.
Prep: 15 min., Cook: 15 min., Chill 2 hours

This made my human hungry! And she says that if you only want one serving at a time, you can make the dressing ahead of time, and just toss a single serving of the other ingredients together when you are hungry.

Our humans definitely eat a lot of salads in the summer because it's too hot to cook!

That sounds pretty yummy, but Mom always has to leave the onions out. Her favorite is the macaroni salad she makes, with miniature shells, chopped sweet gherkins, sliced pimento green olives, celery, seasoning salt. juice from the pickles, mayo and topped with hard-boiled eggs. It is her original recipe, and now she wants some...but Dad has already shopped today. Mau and Allie send their love. That's an easy peasy salad for sure !!! Mom loves slad and could probably eat it three times a day fixed any way whatsoever!!!

Oh yum...this sounds tasty! It might even 'purr-suade' me to actually make something. When it's this hot, my idea of a salad is a sprig of basil on a store-bought pizza! 🐾
