Friendly Fill-Ins and Shopping Around the World

1. I  would like to interview  Pope Benedict XVI.  Bill and I saw him when we went to Rome__.

2. I would like to be interviewed by _EEEK....I don' think I would like to be interviewed at ALL!_.

3. Halloween night was always fun because Bill would dress up in his horses head with his recording of a horse.  The kids loved it!      .
4. Once Halloween is over,   People seem to skip over Thanksgiving and go right to Christmas.      .

Low Carb Pumpkin Cheesecake Mousse

Ingredients

  • 16 ounces cream cheese room temp
  • 15 ounce canned pumpkin not pumpkin pie filling
  • 2 cups heavy cream
  • 1/4 tsp salt
  • 2 teaspoons pumpkin pie spice or use cinnamon, ginger, nutmeg, cloves
  • 1-2 teaspoons Pumpkin Spice SF syrup or sweetener of choice
  • 1 teaspoon vanilla extract

Instructions

  1. In a KitchenAid or stand mixer blend cream cheese and pumpkin until smooth.
  2. Add the rest of the ingredients and blend until whipped and fluffy about 5 minutes.
  3. Taste and adjust sweetener to your liking if needed.
  4. Pipe into serving glasses and top with cacao nibs or brown sugar sub .  Best if Chilled about an hour to set and thicken but still fantastic to enjoy immediately!
  5. Keep refrigerated until ready to serve.

Canned Pumpkin  $1.88


Heavy Cream  $3.24/ pint


Pumpkin Pie Spice  $3.99/1.12 ounce jar



Pumpkin SF or regular syrup  $7.99 for 750 ml bottle (Mom uses these syrups in tons of stuff)

  7. Great fill-ins. Mom was happy to hear that Target was going to slow down the Christmas race until Thanksgiving. It would be nice to see that happen.

  11. Oh my! This mousse looks delicious not like the mooses around here. Sounds very fatting....between you and me, there seems to be more of mom to love these days. These mousse is ideal for special occasions....it looks so good too.

  12. This dip looks so yummy ... we're going to have to try this! I can't believe there was a time I didn't like cheesecake! We like Thanksgiving too ... then again, my birthday is always within a few days of it ... so there's that too :)
