Shopping around the World will be hosted on Friday, June 29th. This month we will be highlighting easy dinner ideas for the summer months. Summer brings heat and who wants to be in the kitchen cooking, right? So this month, let's concentrate on what you prepare for dinner in the summer months.Our Summer meal is usually something cooked on the grill but Mom loves "FAUX" potato salad made with cauliflower instead of potatoes. Dad was a great griller and Mom is still learning about using our grill which is the Big Green Egg. She's never used a grill that was real charcoal before (NO lighter fluid!!)

- 6 cups cauliflower florets
- 1 cup mayonnaise
- 1 tablespoon prepared mustard
- 1 teaspoon kosher salt
- 1/4 teaspoon pepper
- 4 hard boiled eggs, chopped (reserve one for garnish)
Cook cauliflower until crisp-tender. Make sure you drain it well or your salad will be watery. Mom pats it with paper towels.
Mix mayonnaise, mustard, salt, and pepper in a large bowl. Add cauliflower. Stir in chipped eggs. Some people like to add a little pickle relish. Mom doesn't. Cover and refrigerate for 2 hours. Cauliflower $2.70 (on sale right now)
Mayonnaise $4.59/15 ounce jar (Mom only buys it when it's BOGO)
Prepared Mustard $1.99/12 ounce jar
Eggs $2.89/dozen

Oh my Mom wants to try this one.......cauliflower is something she just plain FORGETS to buy at the store but this might revive her memory a little......LOL

That "salad" looks yummy! Every year without fail ... some yahoo is setting off fireworks from 4pm on the 4th to 2 or 3am the next morning in our courtyard. Bear always gets all skittish - one year, he hadn't laid down or taken a nap by 1am so I turned on my music list and pumped up the volume. I had a sleeping kitten in about five minutes :)
#3 is purrfect. What a wonderful thing to do everyday. The salad sounds interesting and very easy. Mau is sending his beloved Allie a bazillion smooches and love to last a lifetime.
