Today is the Come Fly with Me Blog hope for our special friend Sammy from One Spoiled Cat. Sammy is a super friend and we love him a lot. He's famous for his Tuesday Teaser, Poetic Thursdays, his sense of humor and, of course, his super big paws!!! We decided to take Sammy on a tour of the Space Coast of Florida where we live. Sammy has actually been here once before in the Flat. Here he is in a photo with Raz, Allie, Madi, Anya and Gracie in a Cat Scouts traveling Flats project.
While he was here in the Flat he expressed a desire to try surfing. He didn't get to try surfing in the Flat but we had a surprise for him. Pro surfers Damian and CJ Hobgood are from here so they gave him a lesson.....we think Sammy did really well for his first time out.....
After a great morning of surfing, we stopped at Lil Dos - a popular local Mexican restaurant here. They were thrilled when they heard the famous Sammy was coming!
After lunch, we headed up to the Kennedy Space Center. We were really impurressed when we saw that they TOO had a welcome sign out for Sammy....
After touring for a while, we headed over to the Atlantis expedition. The space shuttle Atlantis is homed here.
We spent lots of time looking at Atlantis.....ut oh........SAMMY! You can't nap up there!!!
We hated to see the day end, but we knew Sammy had other places to visit. We made one more stop at the beach (we THINK he wanted to get back in the sand!)
Sammy, we loved having you visit and we love YOU. You know how much you mean to us.

30th - after the holiday so we can all make plans. Since it is the
Thanksgiving holidays here in the States, this month we will focus on
Thanksgiving foods. So, you can post appetizers, side dishes, salads, soups,
main entrees or desserts. What is something that you look forward to once a
year at Thanksgiving. I mean yes we can have it throughout the year but having
it at Thanksgiving screams the holiday? This gives you a wide variety of foods
you can come up with. Fix whatever your dish is, take pictures and post it with
recipes and prices on November 30th on your blog. Remember to link back to my
blog posting so people can see yours. This is a wonderful way to (1) meet new
friends in blogville and (2) get some wonderful recipes. And I'll admit it.
This piggy has been known to visit on these days and lick the computer screen
at some of your awesome dishes. I'm just sayin' - some of pictures look out of
this world!!
Filling: 1 1/2 cups sweetner 1 Tbsp blackstrap molasses 2 large eggs 1/2 cup butter, melted 2 Tbsp heavy cream 1 Tbsp almond flour 1 tsp vanilla 1 cup chopped pecans 1 cup halved pecans
Preheat oven 350 F. For the crust, combine all the dry ingredients in a bowl. Add the coconut oil and stir to combine. Pour the mixture into a pie pan and pack the mixture along the bottom and up the sides to form a crust. Bake for 7-8 minutes or until lightly golden. Reduce oven to 325 F.While the crust is cooling, beat the sweetener, molasses, and eggs until creamy. Add the remaining ingredients, except for the pecan halves, and beat to combine. Pour the filling into the pie shell and top with pecan halves. Bake uncovered for 30 minutes. Cover loosely with foil and bake for an additional 30 minutes.Best served warm.
I am only pricing the filling since you can really use any crust recipe you have or even use a store bought one if you are not low carb.
