Sunday Selfies and Shopping Around the World

We're pawticipating in The Cat on My Head's Sunday Selfies today.



Ellie and Allie were super tired after their big celebration  yesterday but said they would do one sleepy selfie before taking a nice snooze.  We think they did a pretty good job considering how exhausted the were

And today is also Shopping Around the world with our pal Bacon from PigLove.  This month Shopping Around the World is hosted by our pals Shoko and Kali from The Canadian Cats

Now, on to our Shopping Around the World for April.  We are handling the SAW for April.  We have decided to have recipes done with seafood.  You have a special tuna salad sandwich recipe…write and tell us all about it, including the prices in your area for the ingredients.  Got a good recipe for jellyfish without the stinger, let us know.  A cold or hot meal is great.  Remember to spell the recipe out as mom is not exactly the greenest nip on the vine these days. MOL

Shopping Around The World and your recipe will be held on April the 30th  folks.  My mouth’s waterin’ already.                           

Our recipe for this month is Seafood in parchment.

  2             ounces  leek
  4 1/2         ounces  yellow squash
  3             ounces  zucchini
  1           teaspoon  dill
  2        tablespoons  butter
     3/4            lb  salmon fillet

Preheat oven to 350 degrees. Fold a large piece of parchment paper (about 15 by 16 inches) in half to crease it; open, and lay it flat.


On one side of crease, mound zucchini; top with leek, butter, dill, and lemon slices. Season with salt and pepper. Place salmon on top; drizzle with lemon juice, and season with salt and pepper.

To close, fold parchment over salmon; make small overlapping pleats to seal the open sides and create a half-moon-shaped packet. Place on a rimmed baking sheet; bake until salmon is opaque throughout, 15 to 17 minutes. Serve (see note).

Love the snoozy selfie - the girls deserve that after the big party yesterday..........AND we also love this recipe! Salmon for Mom and Dad's dinner might mean salmon for me too! YAY!

Allie and Ellie, we are so delighted that you had such a great birthday you are now exhausted. You both look sweet and peaceful. Mau is sorry that Denmaster decided to start her site migration just as he posted some cake and champagne for Allie. Mom thinks that recipe looks yummy, but she'd have to use some type of white fish. She just cannot eat salmon. We are sending lots of love and hugs to all, and Mau is sending Allie his never-ending love and oodles and oodles of smooches. A charming picture of two tired girls. They sure don't look their age but I bet they feel it this morn.

Mom is slobbering over the recipe. You know I would sure like the salmon. Mom can have the veggies. Mom says this recipe would be ideal with garden fresh leeks, squash and zukes. Thank you for the recipe...this is a winner.
