A Birthday and Poetic Thankful Thursday

Even though Sawyer is off on Adventure by himself, Noelle wanted to make sure she sent him his birthday card so he could have it when he got home.  We hope he goes home soon.  That would be a super-duper birthday celebration!!!

Today is also Poetic Thursday hosted by our pals Teddy and Angel Sammy at Two Spoiled Cats

Today's photo prompt is

The Irish Pub

Belly up to the bar
We're glad we didn't drive too far.
A pint or two at the pub
Maybe we'll grab a little grub.
Coming here is quite a treat.
We always love the folks we meet.

Today is also Brian's Thankful Thursday Blog Hop!

First, we are THANKFUL for everyone who is purring and praying for  Sawyer to return home safely.   We will NOT give up on him.

We're thankful that Mom got a First Commenter badge on Teddy's Tuesday Teaser.  It wasn't too hard since she is not sleeping well since Sawyer went on his walkabout.

This month's theme is:

SUMMER FOOD,

so what’s the meal or the snack, drink, dessert or whatever you love to eat or to drink   in summer?
Tell us about it please and share the recipe on

WEDNESDAY , JULY 1ST

Our recipe is for a Crustless Caprese Quiche.

1 1/2 cup Grape tomatoes (halved) 1 cup Fresh basil (chopped)
4 cloves Garlic (minced)
9 large Egg
1/2 cup Unsweetened almond milk (or any milk or cream of choice)
3/4 tsp Sea salt 1/4 tsp Black pepper (or more to taste)
6 oz Fresh mozzarella cheese (1" balls or cut into 1" pieces

1. Preheat the oven to 350 degrees F (177 degrees C). 2. Combine the tomatoes, basil, garlic, and 2/3 of the mozzarella pieces in a bowl. Transfer the mixture to the bottom a 9 in (23 cm) round (or square) glass or ceramic pan. 3. Whisk together the eggs, milk, sea salt, and black pepper (you can reuse the same bowl). Pour the egg mixture into the pan over the tomatoes and basil. 4. Bake for 30 minutes, until almost set. 5. Dot the remaining mozzarella pieces on top of the partially baked quiche. Bake until set and golden and completely set, about 15 minutes. 6. If there is any liquid near the edges (from the tomatoes), drain before serving. Garnish with additional fresh basil ribbons.

Yummy and EASY!

Monday Sparks and a Special Birthday!

Before we share today's SPARK, Noelle wanted to send a birthday message to her special guy, Sawyer from The Cat on My Head.

Even though McGuffy's reader is taking a break, we are continuing our Monday Sparks posts!  From the original Sparks posts:
Welcome to Sparks. Many years ago, it was my intent to post an inspirational thought each Monday. It would be my weekly meditation, and perhaps feed other people's spirit as well. Life got busy, and this fell by the wayside. Now, I feel a strong need to bring this feature back.
The negative energy in the world has become thick and oppressive. Social media has become a part of this dark, negative storm. There is an obvious universal need for more positive energy and peace. And, we can all be part of this affirmative change.
I believe we are meant to be lights in this world. If we allow our light to shine, we can see where we are going. It is then that we can begin to truly see each other clearly. Together, we can light up the entire world!
I hope you will join us. Please link up a positive quote, thought, poem, or verse. The badge and code can be found in my sidebar. Add the badge to your post to invite others. The more, the merrier. I welcome your thoughts. Peace.

Here is our Sparks post for today.  We thought it was appropriate for 4th of July week.
