Shopping Around the World


Shopping Around the World is hosted by us and our friend Fozziemom.  This month it is scheduled for November 30th - after the holiday so we can all make plans.  Since it is the Thanksgiving holidays here in the States, this month we will focus on Thanksgiving foods.  So, you can post appetizers, side dishes, salads, soups, main entrees or desserts.  What is something that you look forward to once a year at Thanksgiving.  I mean yes we can have it throughout the year but having it at Thanksgiving screams the holiday?  This gives you a wide variety of foods you can come up with.  Fix whatever your dish is, take pictures and post it with recipes and prices on November 30th on your blog.  Remember to link back to my blog posting so people can see yours.  This is a wonderful way to (1) meet new friends in blogville and (2) get some wonderful recipes.  And I'll admit it.  This piggy has been known to visit on these days and lick the computer screen at some of your awesome dishes.  I'm just sayin' - some of pictures look out of this world!!

LOW CARB PECAN PIE

Crust:
1 1/2 cups almond flour
3 Tbsp equivalent sweetener 
1/4 tsp baking soda
4 Tbsp butter, melted


Filling:
1 1/2 cups sweetner
1 Tbsp blackstrap molasses
2 large eggs
1/2 cup butter, melted
2 Tbsp heavy cream
1 Tbsp almond flour
1 tsp vanilla
1 cup chopped pecans
1 cup halved pecans

Preheat oven 350 F. For the crust, combine all the dry ingredients in a bowl. Add the coconut oil and stir to combine. Pour the mixture into a pie pan and pack the mixture along the bottom and up the sides to form a crust.  Bake for 7-8 minutes or until lightly golden.  Reduce oven to 325 F.While the crust is cooling, beat the sweetener, molasses, and eggs until creamy.  Add the remaining ingredients, except for the pecan halves, and beat to combine.  Pour the filling into the pie shell and top with pecan halves.  Bake uncovered for 30 minutes.  Cover loosely with foil and bake for an additional 30 minutes.Best served warm.

I am only pricing the filling since you can really use any crust recipe you have or even use a store bought one if you are not low carb.

Blackstrap Molasses  $2.88/12 ounces
Eggs  $2.19/ dozen
Butter  $5.19/ lb but BOGO so $2.70/lb
Almond Flour  $6.98/ 11 ounces
Heavy Cream  $5.98/ 32 ounces
Pecans - $9.88/1 lb bag

This looks REALLY, REALLY good. My stomach barely tolerates whole nuts anymore, but I WANT TO TRY THIS. It looks incredible.

Momma wondered about the calories although she did the Atkins diet and knows calories don't matter when you keep the carbs at 20 gr. a day.

Mom says that Mom Sharon's pie looks super yummy. If licking the computer screen would get her some, she would gladly do it. She too makes a killer pecan pie, but must confess that she now uses a store-bought crust. Mau is send his most gorgeous and beloved wife a bazillion kisses and love to last until the end of time. That looks delish! You must be a great baker! The only thing TW bakes is pumpkin pie. I would have done TW's stuffings. She thinks they're the best.
